Friday Food Frenzy

So I have all these awesome recipes that I want to share with you, but I don't want each post to be a recipe, so I'm gonna have a Friday Food Frenzy where I post several recipes in one post every Friday!

Lately I've been obsessed with having waffles!!  I've been making them from scratch and they are so yummy!  However, when James lost his job I wasn't able to buy almond flour because it's super expensive, so I was using whole-wheat flour (which is a Paleo no-no), but I had to make due with what we had!  During the fall months I was making Pumpkin Waffles!  But now that James GOT A JOB (at DATCU in Denton)!!!  I was able to buy some almond flour!! So this past week I finally made Actual Paleo Coconut Waffles!!

Paleo Coconut Waffles

Ingredients:
2 Eggs
1/2 Cup of Shredded Coconut
3/4 Cup of Almond Flour
1/2 Cup of Whole Milk OR 1 Can of Coconut Milk (full-fat)
Dash of Baking Powder
Dash of Baking Soda
Dash of Salt
A Little Cinnamon (more or less depending on your preference)
Dash of Vanilla

How To:
Stir all the ingredients together while your waffle iron (or skillet if you wanna make pancakes) is heating up.  Spray with non-stick spray. Cook in waffle maker till it's done cooking!  Cook a little longer if you like your waffles crispy. Put REAL butter on & enjoy!

James & I found this sugar-free syrup that we indulge in.  Pretty sure it's not paleo at all, but at least it's sugar-free right?! I'll have to brain storm some paleo "syrups" to make...coming soon.
These waffles are SO yummy!  I didn't have any coconut milk at the time, so I used whole-milk, but I can't wait to make these with the coconut milk. I.LOVE.COCONUT!

*Also, if you want to make these Paleo Pumpkin Waffles, just take out the shredded coconut (or keep it in if you're like me and LOVE coconut) and add a couple spoonfuls of pureed pure pumpkin (no-sugar added).

Here's another breakfast dish:

Zucchini Hash w/Over-Easy Eggs


Ingredients:
1-2 zucchini (shredded)
1/3 Cup of Onion (chopped)
Eggs (however many you want)
Bacon
Olive or Coconut Oil

How To:
Shred the zucchini with a grater and then put in a washcloth or paper towel and squeeze as much fluid as you can out of the shredded zucchini (this helps it to become more crispy instead of soggy).
Chop Onions.  Saute onions in olive oil or coconut oil in medium-high heat. Then add the shredded zucchini.  Flatten out the zucchini with a spatula & turn to medium heat.
While that is cooking, cook the bacon either in a skillet or microwave, till done & crispy.  Let bacon cool & then crumble it. 
Stir & flip the zucchini & onions a little bit. 
Then cook eggs in a skillet, however you like your eggs - with this dish they are really good over-easy.  
When all is done, dish the zucchini & onions onto a plate, put eggs on top, and then top eggs with the crumbled bacon!  
YUM!

Have some fruit on the side.  Also, the bacon isn't shown in this picture...

Easy-Peasy Lettuce Wraps

Ingredients:
Head of lettuce or Romaine Lettuce Leaves
Ground Beef
Garlic Salt
Tomatoes - chopped
Avocado - sliced
Salsa

How To:
Cook ground beef - season with some garlic salt.  When done, dish a spoonful in lettuce leaf, top with tomatoes, avocado, and salsa - and EAT!! 

This is a super easy recipe for lunch or dinner!! And 100% Paleo!

Quicky Applesauce Snack

Ingredients:
100% Pure Applesauce (No-Sugar Added)
Cinnamon
Walnuts (or other nuts: Pecans or Almonds)

How To:
Put all ingredients in a bowl and eat!  
This is so quick, yummy, and paleo!

P.S. - So yeah, James got a job!! A HUGE blessing and answer to our prayers.  We don't have to worry about moving because this job is, at most, 10 minutes from our house.  God is so good to us, and we are SO undeserving.
