Well for Christmas we had everyone come to our house, so I cooked and tried to make it as Paleo as possible!! So here are some of the recipes I used...<br />

For Christmas Eve dinner we had soup:<br />

<li>1 medium sized Red Onion (chopped)</li>
<li>1-2 lbs of ground beef</li>
<li>Sea Salt (few dashes)</li>
<li>Garlic Powder (generous amount)</li>
<li>Dried Basil (generous amount)</li>
<li>Dried Oregano (generous amount)</li>
<li>Cayenne Pepper (3 dashes)</li>
<li>4 (big) sliced Carrots</li>
<li>4-8 sliced Celery Stalks</li>
<li>1-2 handfuls of Green Beans (bite-sized chopped)</li>
<li>4 cans of Chicken Broth (preferably organic)</li>
<li>1 can of Diced Tomatoes (preferably organic & no-salt added)</li>
</ul><div><b><u>How-To:</u></b></div><div><ul><li>Wash & prepare all veggies. </li>
<li>Cover bottom of a large pot with Olive Oil and let heat over medium-high heat.</li>
<li>Add ground beef and all the seasonings - brown the beef.</li>
<li>Once browned add all the veggies, chicken broth, and diced tomatoes. Stir well.</li>
<li>Turn heat to low, cover, and let simmer for about 45 minutes.</li>
<li>Dish into a bowl (cover with cheese if you so desire) and enjoy on a cold night!!</li>

<li>1 tsp of Baking Powder</li>
<li>1 1/2 Cup of Unsweetened Shredded Coconut</li>
<li>1/4 Cup of Agave Nectar (or Raw Honey)</li>
</ul><div><b><u>How To:</u></b></div><div><ul><li>Preheat oven to 350 </li>
<li>Stir or blend all ingredients together well.</li>
<li>Spray a pan with non-stick spray and fill with mixture. (or put in cupcake paper in a cupcake tin). </li>
<li>Cook for 40-50 minutes.</li>
<li>Remove, let cool, then eat!! </li>

But we tried it the next day and he still did not like it at all. Then we tried pureed yellow squash, still no go. The next day I tried that mixed with breast milk - it was a little better, but still no. I just don't think he's ready for food yet and that's ok! </div><div style="text-align: left;">*Side note: we are not starting him with rice cereal. Since our lifestyle is eating paleo, we're not going to introduce him first to things that aren't paleo and then take them away later. </div><div style="text-align: left;"><br />

I love this time of year...I actually usually like the cold. The air has a crispiness that is refreshing. I love LOVE Christmas lights. Every store or restaurant you go in to has Christmas music playing. You get to go to or throw parties. Gifts are given and received. Last year we decided that each month we'd all put $10 in a savings account and save up for all of us to go on a yearly vacation!<br />

A few weeks back on Sunday, November 13th Aiven had his baby dedication at our church, Denton Bible Church! It was a time for us to go before our congregation and pledge that we, as Aiven's parents, will raise him in a godly way, teaching him the Gospel of Christ.<br />
<br />
Tommy Nelson, our pastor, wrote a letter to us that better explains what a baby dedication is. Here is a part of his letter:<br />

<div style="text-align: center;">"There is nothing saving in a dedication. At Denton Bible we don't baptize babies because <i>a parent cannot bring a child into-covenant with God. The child alone can believe the gospel.</i> There is nothing magical about a dedication. <i>It does nothing to insure a child's salvation or a blessed life.</i></div><div style="text-align: center;">So what <i><b>is</b></i> a dedication? It is the public accountability of a parent to model a godly life and to raise their child in the discipline and teaching of Jesus Christ and in the fellowship of His church." </div><div style="text-align: center;"><br />
</div><div style="text-align: left;">He also asked some questions in his letter to help us remember the way we ought to be living, I pray we think of and reflect on these questions <b>often</b>:</div><div style="text-align: left;"><br />
</div><div style="text-align: center;">"Is the environment and home life the two of you create such a one as to promote happiness and peace in your child?"</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">"Do the two of you seek to model the biblical roles of a husband and wife? As a husband do you seek to be the spiritual leader of your home? Do you as a wife seek to follow the role of a submissive and godly wife?"</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">"Will you faithfully meet with Christ's church in worship?"</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">"Will this child be raised in truth and righteousness?"</div><div style="text-align: center;"><br />
</div><div style="text-align: left;">These questions are so good to remind and convict us to live by them. Our desire is for these questions to have the answer be 'yes' to them 100% of the time....unfortunately though we are sinners, but thanks to the grace of God and His Holy Spirit we can try and succeed at times...</div><div style="text-align: left;"><br />

Lately I've been obsessed with having waffles!! I've been making them from scratch and they are so yummy! However, when James lost his job I wasn't able to buy almond flour because it's super expensive, so I was using whole-wheat flour (which is a Paleo no-no), but I had to make due with what we had! During the fall months I was making Pumpkin Waffles! But now that James GOT A JOB (at DATCU in Denton)!!! I was able to buy some almond flour!! So this past week I finally made Actual Paleo Coconut Waffles!!<br />

</div><div style="text-align: center;"><b><u>How To:</u></b></div><div style="text-align: center;">Shred the zucchini with a grater and then put in a washcloth or paper towel and squeeze as much fluid as you can out of the shredded zucchini (this helps it to become more crispy instead of soggy).<br />
Chop Onions. Saute onions in olive oil or coconut oil in medium-high heat. Then add the shredded zucchini. Flatten out the zucchini with a spatula & turn to medium heat. <br />
While that is cooking, cook the bacon either in a skillet or microwave, till done & crispy. Let bacon cool & then crumble it. </div><div style="text-align: center;">Stir & flip the zucchini & onions a little bit. </div><div style="text-align: center;">Then cook eggs in a skillet, however you like your eggs - with this dish they are really good over-easy. </div><div style="text-align: center;">When all is done, dish the zucchini & onions onto a plate, put eggs on top, and then top eggs with the crumbled bacon! </div><div style="text-align: center;">YUM!<br />

Glazing gives an antiquey (yeah I made that word up) look. </div><div style="text-align: center;">First you put it on with a paint brush or rag. Then, right after putting it on (don't let it sit & dry), you wipe it off with a barely damp cloth. Make sure you get it in all the nooks & cranny's. </div><div style="text-align: center;"><br />

It was really hard seeing him crying and out of it after he woke up from surgery...it took us a while to get him calmed down enough to go to sleep. Then the rest of the day at home all he did was sleep and when he woke up he just cried. But after that first day he recovered great!! He slept a lot (mostly b/c of the medication) but when he was awake, he was his old smiley self!! 1. In a small-medium saucepan melt the coconut oil, raw honey, & almond butter.<br />
2. Then add in the rest of the ingredients (cocoa, coconut, almonds) and stir well.<br />
3. Then dump it out onto parchment paper on top of a cookie sheet. <br />
4. Spread it out, flattening it with a spatula.<br />
5. Put it in the fridge or freezer to chill and harden. <br />
6. If you want to, once it's hardened, cut it into bite-size pieces. Enjoy!!!<br />

Then I trimmed the edges of the book covers, then I measured out 3 holes, where a typical 3-hole punch would go, and then I hammered a nail through each hole marking (we didn't have any blocks of wood, so I put the book on top of a cardboard box to hammer, but it would've been much easier if it was on a hard, stable surface):<br />

Also, Aiven is 4 months old today!! I can't believe how fast time goes by. I remember thinking about him being here when I was pregnant, being sure that day would never come. And then holding him in my arms in the hospital never imagining him to be 4 months old. Yet here we are, he <i>is </i>here and he <i>is </i>4 months old. And I'm so thankful for that. His life is in God's hands and really we were never promised that he would be born and were never promised that he'd make it to 4 months old - but he has and that's a gift. 1/3 (or 1/2) Cup of Yellow Onions (chopped)<br />
1 Tbsp. Olive Oil (or coconut oil)<br />
Salt & Pepper (to taste)<br />
4 Eggs (over-easy, med., or hard)<br />
2 Slices of Bacon<br />

<b><u>How to Make</u></b>:<br />
1. Grate Sweet Potato<br />
2. Chop Onions<br />
3. Heat Oil in Large Skillet<br />
4. Once heated, add onions<br />
5. Cook onions till translucent or slight browned, then add sweet potatoes<br />
6. Stir onions & sweet potato together and flatten through out the skillet<br />
7. While this is cooking, microwave or cook bacon in a skillet until well done (enough to be able to crumble at the end)<br />
8. Then fry the 4 eggs (easy, med, or hard - however you like it)<br />
9. Then put the sweet potato hash on a plate, put 2 of the eggs on top, and then crumble the bacon on top of that - then do the same on another plate with the other 2 eggs! and ENJOY!!<br />

And in the past few weeks about once a week he'll sleep the whole night, about 7-8 1/2 hours. When this happens I get this little glimmer of hope and pray hard that it continues every night from then on...which it still has yet to do. This it was makes it hard. I get a full night's sleep, now knowing that he <i>is </i>capable of sleeping the whole night, only to get woken up the following night at 3 am. This has been frustrating to me. I've been praying, and have other people praying as well, that he starts to sleep all night <i>every</i> night. </div><div style="font-family: Georgia,"Times New Roman",serif;"><br />
</div><div style="font-family: Georgia,"Times New Roman",serif;">However, I have been thinking about this and have realized that I need to be praying about my heart and the way I react & feel when he cries to be fed in the middle of the night. I need to be joyful and content as I hear that cry of hunger, even if it's woken me up at 3 in the morning. I've realized that I need to cherish this time because he won't need me like this forever. I need to enjoy the time alone with my baby, giving him what he needs. So I pray tonight I awake with a joyful heart as I stumble to the crib to comfort my baby....</div><div style="font-family: Georgia,"Times New Roman",serif;"><br />

It was fun and challenging. Having 2 little humans that can't do anything for themselves and cry when they need something is, at times, a difficult thing to handle. He is so calm and collected in times where some (not all) men would freak out or get depressed. A few weeks ago I found our wedding video and watched it. One of our officiants (who was also our friend) had asked each of us before the wedding what the ingredients were that made the other person and why we wanted to marry them. One of the things I said about James was his stability and trust in the Lord. And when things like this happen I am so thankful for this attribute!!</div><div><br /></div><div>Laughter is good for the soul too. We have often found ourselves making jokes about the situation. However, this is not to say that we're just sitting back, laughing, and doing nothing. As soon as James got home, he started updating his resume and applying for jobs online (and picking up one of the two unsatisfied babies...).
